Philippe Chatillon managed the iconic Jura estate Domaine de La Pinte for almost two decades before striking out on his own in 2013. Sandwiched between Burgundy and the Swiss border, France’s smallest wine region is famed for its unique, sometimes challenging and regularly deciduous white and oxidised wines. Phillipe farms biodynamically, eschewing chemical fertilisers of all sorts and working entirely by hand. Things get even funkier in the cellar, where he uses the noise vibrations from harps to encourage balance in the wines. Whether or not that makes any difference, we’ll leave it for you to decide!

‘Les Nouvelles’ is a style that is halfway to becoming a vin jaune. The wine is made from 20-year old vines, fermented using wild yeast and aged in old oak casks for two years. In the second year, Phillipe allows the level of wine in the barrels to drop, which encourages a layer of yeast to form (like fino sherry and vin jaune) and the ageing finishes ‘sous voile’ or ‘under the veil’.

Tasting notes : Pineapple, lemon, camomile. Extraordinarily complex with fresh acidity.

Food pairing : Outrageously versatile ! Pair with pungent Vacherin Mont d’Or, richly flavoured sea-food or sushi.
