César Florido is the oldest sherry bodega in Chipiona, a coastal town that lies outside the main production area for sherry known as the “sherry triangle”. The Atlantic ocean is just 50m from the door of the bodega, which helps to maintain the cool, humid conditions needed to mature sherry, despite the prevailing heat of Andalucia. 

Cream remains Britain’s most widely consumed style of sherry and, indeed, it’s produced almost exclusively for the UK market. Mass-production by large bodegas has ruined its reputation but it is an exciting and food-friendly wine when made with care. The wine begins its life as an Oloroso before being sweetened with the addition of Moscatel (a rare grape used solely to make sweet wine). 

Tasting notes : Toasted brazil nuts, toffee, dried apricots. Sweet but not cloying. 

Food pairing : A great match with any and all blue cheese !
